百合在我國栽培已經(jīng)有近千年的歷史了，據(jù)《本草綱目》中就有記載，百合有安心定膽，益智、養(yǎng)五臟的功效。 百合的鱗莖富含蛋白質(zhì)、淀粉、脂肪、生物堿等多種成分，營養(yǎng)價值高，每100克百合含蛋白質(zhì)3.2克，抗壞血酸18毫克、鉀510毫克、鈉6.7毫克、鈣11毫克、鎂43毫克、鐵1.1毫克、硒0.2毫克。 可以起到清熱、潤肺止咳、補中、提高、消腫、美容等功效，所以一直被人們當作良好的滋補食品，不僅有蒸食、煮湯等吃法，而且發(fā)展出炒、炸、燜、燒等吃法，可也做出許多美味的菜肴來，單是列入菜譜的，就有100多個品種。由于百合渾身是寶，在國內(nèi)市場需求增加的同時，歐美和東南亞各國也逐步認識到它的價值，紛紛到中國來進口百合。
